水煮活魚的做法

To make "水煮活魚" (Sichuan boiled fish), here is a general recipe:

Ingredients:
- 1 whole fresh fish (such as tilapia or carp), cleaned and cut into slices
- 1/4 cup vegetable oil
- 1 tablespoon Sichuan peppercorns
- 3-4 dried red chili peppers, chopped
- 2 tablespoons ginger, minced
- 2 tablespoons garlic, minced
- 1 leek, sliced
- 1/4 cup Doubanjiang (fermented broad bean paste)
- 1 tablespoon soy sauce
- 1 tablespoon Shaoxing wine
- 1 teaspoon sugar
- Salt to taste
- 4 cups water
- Cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons water)
- Fresh cilantro for garnish

Instructions:
1. Heat vegetable oil in a wok or large pan over high heat.
2. Add Sichuan peppercorns and dried red chili peppers, and stir-fry until fragrant.
3. Add minced ginger, garlic, and leek, and continue to stir-fry until aromatic.
4. Add Doubanjiang and stir-fry for another minute.
5. Pour in soy sauce, Shaoxing wine, sugar, and salt. Mix well.
6. Add water and bring to a boil.
7. Gently add the fish slices into the boiling broth and cook until the fish is just cooked through.
8. Stir in the cornstarch slurry to thicken the broth.
9. Transfer the fish and broth to a serving dish.
10. Garnish with fresh cilantro before serving.
